Clay Douglass Cooking Secrets - Tomato Soup

Ingredients: 4 cups chopped tomatoes, 4 cloves garlic, 1 sliced onion, 3 tablespoons all purpose flour, 1 teaspoon salt, 1 teaspoon white sugar, 2 tablespoons extra-virgin olive oil.

History: The canned condensed version of the soup is one of the leading styles in the U.S. and is most associated with the Campbell Soup Company.

Instructions: In a large pot, combine the onion, garlic and tomatoes and bring them to boil. Boil for about 20 minutes. Next, run the mixture through a food mill into a large bowl. In the same pot, put now the olive oil and flour cooking until the roux is a medium brown. Gradually start adding the tomato mixture. Finally season with salt and sugar to your taste. Ready to enjoy!
