Monday, perfect time for a new Clay Douglass Cooking Secret, Spiced Clams.
Ingredients:1 small onion finely chopped, 1 sliced celery stick, 1 teaspoon ground turmeric, 2 tablespoon extra-virgin olive oil, 3 garlic cloves finely chopped, 2 tablespoon chopped fresh parsley, 2 lb small clams, in the shell, 2 tablespoon dry white wine, 1 tablespoon chilli, salt and ground black pepper
Preparation: put the onion, celery, garlic in a large pan, add the olive oil, spices and chopped parsley and stir-fry for about 5 minutes. Add the clams to the pan and cook for 2 minutes.
Add the wine, then cover and cook gently for 3 minutes, shaking the pan occasionally. Season and serve.
Total time: 20 minutes.
