Clay Douglass Cooking Secrets brings you today the avocado salad.

Instruction: Preheat grill to medium heat. Put tomato sliced on a large platter. Place avocado halves in a bowl and add two tablespoons olive oil, juice of one of the lemons, salt and pepper. Place each half, on grill for about 30 to 45 seconds. . When well caramelized, remove and place on top of the plated tomatoes. In another bowl, squeeze the other lemon over the sliced red onion and mix well. Add the remaining olive oil, season with salt and pepper. Place onions in the empty avocado pit holes. Spoon the remaining lemon/olive oil mixture over avocados and onions. Sprinkle pine nuts and grate cheese on top.

Ingredients: 10 vine ripened tomatoes, quartered, 4 avocados, peeled, halved, and pitted, 2 1/2 lemons, 1 sliced onion, 1/2 pound Parmesan cheese, 1/3 cup extra-virgin olive oil, 1/4 cup pine nuts, toasted in the oven.

Total time: 20 minutes.

Clay Douglass and his 37 Cooking Secret: Beef Carpaccio March 26, 2010

Beef Carpaccio, the latest Clay Douglass Cooking Secret.

Ingredients: 10 ounces beef tenderloin from the tip end of the roast, 4 handfuls arugula, Modena vinegar, salt, Parmesan cheese.

Instructions: Wrap the tenderloin in plastic wrap and place in the freezer for 2 hours.

After 2 hours, thinly slice the beef into approximately 1/8 inch inch pieces. Lay out sheets of plastic wrap and place each slice onto the plastic. Top with another piece of plastic and pound the meat with a meat mallet. Divide the meat evenly among the plates and add the arugula, Modena vinegar, Parmesan cheese and salt to your taste.

Total Time: 3 hours.

A new day, a new Clay Douglass Cooking Secret. Today we are cooking Beef Taco Recipe.

Ingredients: 2 lbs ground beef, 1 teaspoon Salt, 2 tablespoons Chilli powder, 2 tablespoons Paprika, 2 garlic cloves, 1/2 diced pepper, 1/2 diced Onion, 12 corn tortillas.

Instructions: In 2 quart sauce pan add the salt, ground beef, chili powder, garlic, paprika, and enough water to cover meat. Bring to a boil. Simmer over medium low heat about an hour. Then add 1/2 medium chopped onion, 1/2 medium chopped bell pepper continue cooking 20 more minutes. Cook corn tortillas, one at a time, in hot oil until soft, about 10 to 15 seconds; drain.
Spoon 2 Tablespoons of the beef taco meat in center of each tortilla. Roll up like an enchilada. Feel free to add some Tabasco sauce.

Total time: 30 minutes.

A new week, a new Clay Douglass Cooking Secret.

Ingredients:1/2 stick unsalted butter, 1/4 c. diced green pepper, 1/4 c. chopped onion, 12 oz. Italian diced hot sausage, 1/8 c. diced red bell pepper, 1 tsp. cayenne powder, 1/4 c. Cajun seasoning, 4 c. crushed fresh tomatoes, 1 tbsp. Worcestershire sauce, 2 tbsp. dry red wine

Instructions: First, saute the onions, peppers and sausage in butter. Add remaining ingredients and simmer for around 10 minutes. Enjoy!

A new Clay Douglass Cooking Secret, Nachos.

Ingredients: 1 can refried beans, 1 large bag white corn tortilla chips, 1 medium chopped onion, 1 cup shredded pepper jack, 1 diced tomato, 1 cup shredded Cheddar, 1 cup sour cream, 1 can chili, 1 crosswise sliced jalapeno

Directions: Preheat the oven to 350 degrees F. In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

Total Time: 20 minuted.

Clay Douglass brings you Spicy Noodles, a new cooking secret.

Ingredients: 1 package rice noodles,1 green onion, 1 green or red pepper and 1 chili pepper, 1 carrot, pea pods, bean sprouts, 1 tablespoon curry powder, sesame seed oil, 1 sliced red pepper, table spoon fresh ginger, one garlic clove.

Instructions: Prepare all vegetables in advance. julienne slice carrots, green onion and green or red pepper. Mince 2 tablespoons ginger and 1 garlic clove. Cook noodles for about 10 minutes and cut into approx. 1 inch pieces. Once everything is prepared heat oil on a wok. When oil is hot add carrots, onions, garlic, and ginger saute after a minute add the pepper. Saute for another minute or two. Then add veg broth curry paste, curry powder, crushed red pepper and noodles. Saute about 5 to 10 min. until noodles are done add water or more broth while cooking noodles if needed.

Total Time: 30 minutes.

Clay Douglass Cooking Recipe – Avocado Sandwich March 15, 2010

Time for a new Clay Douglass Cooking Secret. Avocado Sandwich!

Ingredients:Bread, 1 avocado, 1 lettuce, 4 tablespoons mayonnaise, 200 grams Swiss cheese, 1 tomato.

Instructions: Lay out two slices of bread. Cover the bread with the Swiss cheese. Next, cut a quarter of the avocado and slice into strips placing them on the bread. Add to slices of tomato on top of the avocado. Break a couple of leaves of lettuce and put them on top of the tomato. Final touch, add a teaspoon of mayonnaise on top of the lettuce. Ready to go!

Total Time: 10 minutes.
