Ingredients: 1 head broccoli, 1/2 cup halved cherry tomatoes, 1/2 cup chopped red onion , 2 tablespoons vinegar, 8 ounces sharp Cheddar, cut into very small chunks, 1 cup diced cooked chicken, salt and black pepper.
Instructions: Trim off the large leaves from the broccoli stem. Wash broccoli and remove the tough stalk at the end. Cut the broccoli into small pieces and place in a large bowl. Add the onion, tomatoes, chicken and cheese. Add salt and black pepper to your taste.
Total Time: 40 minutes.
