Clay Douglass And His 90th Cooking Secret: Microwave Carrot Cake December 7, 2010

This is a great idea to use your microwave and make a super fast Carrot Cake, you have to try Clay Douglass Microwave Carrot Cake.

Ingredients: 1 cup of self-raising flour,  
¾ cup of brown sugar, 1 teaspoon of ground cinnamon,  
2 cups carrots (finely grated),  
½ cup of sunflower oil, 
2 medium eggs 
. For the frosting:  125 g of regular cream cheese, 
60 g butter or margarine,  
2 cups of icing sugar, 
2 teaspoons of vanilla extract.

Instructions: In a large bowl add  flour, sugar, cinnamon and carrot  and mix well. Then add the the oil and eggs and continue mixing all the ingredients. Grease 20 cm microwave pan with butter and then add the mixture. Cook in the microwave on medium high for 8 minutes more or less. For the Frosting, beat the cream cheese and butter or margarine until you have a smooth mixture. Add the icing sugar slowly and then the vanilla extract. Cover the cake with the frosting and decorate as desired.
