Clay Douglass And His 86th Cooking Secret: Baked Salmon with Spinach and Parmesan November 24, 2010

Clay Douglass recommends a very simple and delicious salmon dish that your family and friends will love.

Ingredients: 4 fresh salmon steaks, 
150 g of spinach leaves, 
350 mL of low fat cream,  
2 garlic cloves,  
½ cup of grated Parmesan cheese, 4  potatoes (peeled and chopped), 4 tablespoons of low fat milk,  
2 tablespoons butter or margarine, Salt and pepper as desired.

Instructions: First preheat oven to  350 degrees. Cover the bottom of a deep oven dish the spinach leaves. On the top of the spinach leaves put the salmon steaks and season them with salt and pepper as desired. . On a small bowl mix the garlic cloves perviously crushed and the low fat cream together. Add this mixture over the salmon and cover it with the Parmesan cheese. Bake for about ½ an hour with a moderate heat. On the side, boil the potatos until they are very soft. Then take out the water and mash them well, during the process add milk and butter until soften. Serve all together, with the salmon on top of the mashed potatoes.
