Clay Douglass And His 85th Cooking Secret: Chicken Spring Rolls November 19, 2010

Friday is here along with a new recipe brought to you by Clay Douglass and his Cooking Secrets: Chicken Spring Rolls.

Ingredients: 2 ounces of  dry soy vermicelli, 4 beaten eggs, 1 onion,  2 pounds of  cooked and shredded breast chicken, 2 tablespoons of olive oil, 1 shredded carrot, 3 ounces bean sprouts, 1 tablespoon of soy sauce, 1 clove garlic, chopped, 20 rice wrappers, oil for deep frying.

Instructions: First of all. soak the vermicelli 30 minutes in warm water and then drain. In a medium size bowl, mix all the ingredients: vermicelli, eggs, onion, chicken, olive oil, carrot, bean sprouts, pepper, soy sauce and garlic. Then moisten the rice wrappers with a damp towel and fill with  3 tablespoons approximately of the mixture. Roll the wrappers and wait for 30 minutes. After the time has passed, in saucepan, heat the oil to 375 degrees F and fry the spring rolls  until golden brown, about 2 – 3 minutes. Drain on paper towels and serve with extra soy sauce.
