Ideal for those like Clay Douglass who every now and then like to take a break from meat.
Ingredients: 1 12 ounce pkg. vegetarian burger crumbles, 1 cup barbecue sauce (halved), 1/2 cup chopped onion, 1/2 cup chopped green pepper, 2 cloves garlic, minced, 1/3 cup bread crumbs with Romano cheese, 1 large egg, beaten, 1/4 teaspoon dried parsley, 1/4 teaspoon thyme, 1/2 teaspoon basil, salt and fresh ground pepper to taste.
Instructions: Preheat oven to 320 degrees. Combine 1/2 cup of barbecue sauce and the rest of the ingredients in a bowl. Mix all together for a few minutes. Transfer to a greased 5 x 9 inch pan. Bake for 40 minutes. Pour the remaining 1/2 cup barbecue sauce over the vegetarian meatloaf and bake an additional 10 minutes.
