Clay Douglass And His 81st Cooking Secret: Thanksgiving Sweet Potato Casserole November 5, 2010

To amaze your guests in thanksgiving weekend please try Clay Douglass Sweet Potato Casserole

Ingredients: 4 cups sweet potato (peeled and sliced), 1/2 cup of white sugar, 4 tablespoons of margarine or butter, 2 eggs, beaten, 1/2 cup milk, 1/2 teaspoon vanilla extract, 1/2 teaspoon salt.

On the other hand: 1/2 cup packed brown sugar, 1/3 cup of flour, 3 tablespoons butter or margarine and chopped pecans

Instructions: First, preheat oven to 325 degrees F. Put the potatoes in a medium pan and cover them with water. Cook over medium high heat, when the potatoes are tender drain and mash. In a  bowl, mix together the mashed potatoes, white sugar, eggs, salt, butter, milk and vanilla.  After it is smooth put the mixture in a baking dish.

Then mix the brown sugar and flour in another bowl. Add the butter it is coarse and then add the pecans. After this mixture is ready, spread it over the sweet potato you have in the baking dish. Bake for 30 minutes or until it looks brownish.
