Clay Douglass And His 78th Cooking Secret: Favorite Chicken Parmesan October 27, 2010

Looking for an easy family dinner?  Clay Douglass brings you the Favorite Chicken Parmesan for all the family.

Ingredients: 1 1/2  cup of breadcrumbs, 4  tablespoons of  flour, 4 cut  thin chicken breasts, 2  egg whites (lightly beaten), 1  tablespoon of olive oil, 1 1/2 cups of pre-made tomato sauce, 2  cup of  shredded mozzarella cheese, 1/2  cup  of grated Parmesan cheese, 1/2  teaspoon of red pepper and salt.

Instructions: On a medium size bowl, combine the flour , the breadcrumbs and the red pepper. Then, dip each chicken breast in the egg whites and cover with breadcrumb dipping it inside the bowl. Do this twice, to make sure the chicken breasts are well covered. In the mean time pre-heat oil in a pan and cook  the chicken breasts over medium heat for approximately  3 minutes on each side. Finally, put the  chicken breasts in a  greased backing dish and cover them with the tomato sauce and both cheeses. Bake at 350° for 20 minutes approximately.
