With the Summer getting closer, Clay Douglass Cooking Secrets brings you a super fresh Rice Salad.
Ingredients:2 cups hot cooked brown rice prepared according to package directions, 2 tablespoon olive oil, 1 red pepper diced, juice from 2 limes, 1/2 cup diced red onion, 1 cup of halved tomatoes, 1 cup corn kernels. Salt to your liking, 1/4 cup chopped cilantro.
Instructions: Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add corn kernels and cook, stirring occasionally, until they begin to brown. In a large bowl whisk together lime juice, 2 tablespoons of olive oil and salt and pepper. Stir in hot rice, making sure each grain is coated with the dressing. Add the corn mixture and toss to combine. Let cool to room temperature. Add pepper, tomatoes, red onion and cilantro to the rice mixture and toss well. Serve immediately.
Total time: 50 minutes.
