Wednesday, time for one of my favorite Clay Douglass Cooking Secrets, Chicken Fetuccine Alfredo.
Ingredients: 12 oz. fettuccine, 1/4 lb. fresh mushrooms, 2 green onions, 3 tablespoon butter, 1 c. fresh peas, 2 1/2 c. cooked chicken, 1/2 tablespoon salt, 1/8 tablespoon pepper, 1/4 c. Parmesan cheese
Instructions: Cook and drain Fettuccine.
Next, chop the mushrooms and onions thinly. Saute onions and mushrooms until tender. Add peas, chicken, salt and pepper to your taste, and heat through. Finally, pour over fettuccine and top the dish with the Parmesan cheese. Serve immediately.
Total time: 30 minutes.
