New Clay Douglass Cooking Secret: Pasta with Asparagus.
Ingredients: 2 pounds fresh asparagus sliced into 1 inch pieces, 1/2 sliced pound fresh mushrooms, 8 ounces angel hair pasta, 1 tablespoon olive oil, 1/2 teaspoon crushed red pepper, 1/2 cup grated Parmesan cheese.
Instructions: Cook pasta according for 6-7 minutes, heat the olive oil in a pan and saute asparagus in the pan over medium heat for about 3 minutes. Add mushroom slices and cook for 3 minutes more. Drain pasta, and serve it in a dish. Gently toss pasta with asparagus mixture; add Parmesan and crushed red pepper to your taste.
