Clay Douglass Cooking Secrets brings you today one of my favorite recipes: Clams Oreganata.
History: clams oreganata is an Italian seafood dish served most commonly as an appetizer.
Total Time:35 minutes.
Ingredients: 1/4 cup olive oil (preferably extra virgin), 2 chopped garlic cloves, 5 plum tomatoes chopped and drained, 2 dozen clams, 1/2 cup toasted breadcrums, 1 teaspoon lemon juice, 1 1/2 tablespoon oregano.
Instructions: put garlic in a pot over low heat and cook until crispy. Next, add tomatoes and 1 tablespoon oregano and cook stirring until tomatoes break down. Approximately 5 minutes. Add clams, cover the pot tightly and cook over high heat. Cook, stirring once, until clams open – this should take between 6 and 8 minutes. All clams not opening after 8 minutes need to be discarded.
While clams are cooking, add lemon juice and 1/2 tablespoon oregano. Ready to enjoy!
