Ingredients:1 medium sized onion, 2 tablespoon olive oil, 2 carrots, 8 each button mushrooms, 4 cups water, 6 potatoes, salt and pepper, 1/4 cup parsley.
Instructions:First chop the onion, carrots and trim them together . Next, slice the mushrooms into 1/4 inch pieces, chop the potatoes and parsley. .Heat oil on medium high in large pot and sauté onion and carrot.
Add mushrooms and cook for another 2 minutes. After that, add potatoes and water.
Bring to a boil and cook until the potatoes are tender enough. 15 minutes approximately. Finally add parsley. Season with salt and pepper to your liking and and serve.
Total Time: 40 minutes.
