Summertime is getting closer, Clay Douglass brings you one of his favorite recipes, Insalata Caprese.
History: Insalata Caprese is a simple salad from the Italian region of Campania. The dish is also known as Tricolore due to its three colors, which mimic the Italian flag.

Ingredients: 1 pound fresh mozzarella sliced 1/4 inch, 2.5 pounds vine-ripened tomatoes sliced again 1-4 inch thick, 1/4 fresh basil (washed and drained), 1/4 teaspoon oregano (dried), 4 tablespoons extra virgin olive oil, salt and freshly grounded black pepper.
Total Time: 15/20 minutes.
You will like if: you like very healthy and fresh dishes.
Instructions:Arrange on a large platter the tomato, the mozzarella slices and the basil leaves. Alternate them – this will give us the Tricolore
. Add olive oil and oregano. Finally season with salt and pepper to your liking.
