Clay Douglass Cooking Secrets brings you one of my favorites recipes, Belgium Fries.
Ingredients:Large quantity of oil in large pan (olive oil is advised since it´s lower in fat)
1 1/2 kg potatoes (making sure they’re not watery ), Royal Blue are good.
Instructions: Heat the oil in a hot frying pan . Put in a handfull of fries: not more at once because the oil will cool down too much. Fry for a few minutes (4-8 depending on the thickness and the kind of potatoes), stirring regularly. Once done, remove and put them into a large bowl with kitchen paper. Let them “rest” for 30 minutes.
Once done, fry for only 2 minutes so the fries become crispy and golden brown. This way the fries will be crispy on the outside and soft on the inside. You can add mayonnaise and salt to your taste You will love it!
Total Time: 1 hour
